Veganuary Themed Protein Powerhouse


-1 Can Kidney Beans

-1/2 cup split red lentils

-1 cup vegetable stock

-1 medium onion, diced

-2 mushrooms, sliced

-1 bell pepper, diced

-1 handful curly leaf kale

-2tbsp. olive oil

-1 clove garlic


-Sea Salt

-Black Pepper

-Curry Powder

-Chili Powder



Step 1: Lentils

1. Heat vegetable stock to a boil and then add rinsed lentils and reduce to a simmer

2. Simmer for 15 minutes and then cut heat and let sit

Step 2: Veg

  1. Heat pan and add oil and proceed to Sauté onion in a pan on medium until caramelization begins (3-4 min)

  2. Add garlic and let heat until fragrant (30sec-1min)

  3. Add in the diced peppers, beans and mushrooms and proceed to add salt and pepper and let cook on medium-high heat until cooked down (4-5 min)

  4. Add in the lentils to the pan and add all spices and mix

  5. Add in the kale and cut heating mixing until kale has cooked down
