Veganuary Themed Beyond Beef Enchiladas

Ingredients:

-1lb beyond beef or substitute (real beef works too for the killers among us)

-1 yellow onion, diced

-1 clove garlic

-1 handful spinach

-1 can black beans

-10 corn tortillas

-4 tbsp. olive oil

-2 (10 oz.) cans red enchilada sauce

-1 medium bag Mexican blend shredded cheese

Spices

-Sea Salt, to taste

-Black Pepper, to taste

-1 tsp Cumin

- 1 tsp Paprika

-1 tbsp Chili Powder

Tools

-Oven preheated to 375f (180c)

-2 pans

-Large tray

-Spoon


Step 1: The beef

  1. In a pan heated to medium high heat add in 2 tbsp. olive oil and once shimmering spread throughout pan and add beef, breaking up with a wooden spoon or spatula

  2. Once beef is browned add in the garlic and heat until fragrant (30sec - 1 min)

  3. Add in the diced onion, salt and pepper and sauté until onions soften (2-3 min)

  4. Add in black beans and rest of seasonings and cook down (3-4 min)

  5. Add in handful of spinach until leaves wilt down from heat and then cut heat

Step 2: Rolling

  1. Move the pan to a counter top or to the side to let cool and heat another smaller pan on medium heat with the other 2 tbsp of oil

  2. Once hot begin adding the corn tortillas to the mix and let fry for approx. 5-10 seconds on each side, setting to the side afterwards on a stack of paper towels to absorb oil

  3. In the aforementioned pan pour out the first can of enchilada sauce to create a base on the bottom of the pan

  4. Begin adding about a tablespoon of the beef mixture to each tortilla, topping with cheese, and then rolling up as if making a taquito and then place in a row in the pan

  5. Repeat until all tortillas are rolled up into the pan and then proceed to pour the other can of enchilada sauce over the top as well as the rest of the bag of cheese

  6. Cover with tin foil and put in the oven for 20 minutes

  7. Take out of the oven, remove tin foil, switch the oven to a high broil, and then put back in for 5 more minutes or until bubbly


Optional addition, not vegan: When removing the tray from the oven crack a couple of eggs on top before adding back in to broil (if this step is taken broil for 8 minutes instead of 5)
