Quick and Easy Burritos

Ingredients

-1 Chicken Breast, diced

-1/4 onion, thinly sliced

-1/4 cup black bean salsa

-1 tbsp olive oil

-Spinach, handful

-1 burrito wrap

spices

-salt & pepper to taste


Step 1: Filling

  1. Place a pan on the burner on medium heat and once hot add olive oil and move around pan until shimmering but not smoking

  2. Add diced chicken and cook until browned (3-4 min)

  3. Add in onion and cook until soft (2-3 min)

  4. Add salsa and keep cooking down until mixed in (1-2 min)

  5. Add spinach, salt & pepper and cut the heat, leaving on the hob until spinach cooks down

  6. move pan to the side and allow to cool

Step 2: Wrap

  1. Heat your burrito wrap on medium in a pan to allow it to become more pliable

  2. Add fillings and close the sides in til edges are touching, and then fold the bottom edge over to the middle and roll

Step 3: Enjoy
