Plant Based Sweet Potato Boats

To Feed 4

Ingredients:

-1 lb plant based ground beef substitute

-1 medium onion, diced

-2 Bell Peppers, diced

-4 Mushrooms, diced

-3 Sweet Potatoes

-1 can dark red kidney beans, drained

-2 tbsp oil

-1/4 cup tomato puree

-2 cloves garlic

Seasonings

-Salt to taste

-Pepper to taste

-Chana Masala (substitute for curry powder), 2 tbsp

-Turmeric, 1tbsp


Step 1

  1. Preheat oven to 400F (200C)

  2. Wrap sweet potatoes in foil and poke through all around with a fork

  3. bake for 50 minutes, or until soft to the touch

Step 2

  1. In a large pan over medium heat, add oil and move around until shimmering but not smoking

  2. Add in beef substitute and use a spatula to break up the mince

  3. cook for 1-2 min until fragrant

  4. Add in garlic and leave until fragrant (30sec - 1 min)

  5. Add in diced onion and stir to combine

  6. let cook down for 4-5 min

  7. Add in mushrooms, peppers, beans and seasonings stirring to combine

  8. Once the mushrooms appear to have released any moisture (4-5 min) lower heat and add puree stirring to combine then lowering heat to low and covering until potatoes are ready

Step 3:

  1. Once Potatoes are soft remove from oven, slice lengthwise, and scoop out the inside with a spoon, placing the scooped sweet potato into a large bowl

  2. Fill the potato "boat" with the prepared beef filling and place along a lined baking tray

  3. Once all "boats" are filled sprinkle with mozzarella and cheddar cheese and then cover the tray with tin foil before placing back in 400F oven for 5 min

  4. After the 5 min has elapsed remove the tin foil and switch to broil for 5 min, once this is done the "boats" are complete

Step 4:

  1. In large bowl combine scooped sweet potato with remaining filling, salt & pepper to taste

  2. Using a potato masher or fork combine and fluff, serving on the side
