Lucious Lamb with Glorious Greek Yogurt Sauce


1lb (~450g) lamb diced or minced

1 medium onion, diced

1 medium sized potato, cubed

1 medium sized sweet potato, cubed

1 carrot, sliced

2 mushrooms of any sort, sliced

1/2 bell pepper, diced

1 handful greens of choice, I prefer kale

1/2 cup greek yogurt

2 cloves garlic

sriracha sauce

sea salt

black pepper


mixed herbs


Olive oil or oil of choice

tomato puree (optional)

Step 1: Root Veg

Dice up the potatoes & carrots

Mix with above mentioned seasonings and pop in the oven at 400F (200C) for 35 minutes Mixing up halfway

Step 2: Main, while step 1 is in the oven

Heat pan on medium-high heat until hot

When hot add oil and wait until shimmering but not smoking then proceed to spread throughout pan

Add in minced or diced lamb breaking up with a spatula if mince

After about 2-3 minutes or once decently browned add in diced onion

After about 1-2 more minutes add in 1 clove of garlic

Once the garlic is fragrant add in salt, pepper, tomato puree, mushrooms and peppers

Mind the pan for the next 5-10 minutes until the dish is at desired level of fragrance and seems relatively well cooked

Lower heat to low and add kale and rest of seasonings cover if possible while making sauce

Step 3: Sauce

Once everything is done and cooling grab a large bowl and mix yogurt, sea salt, rosemary, garlic, and sriracha, adding sriracha until the sauce gets a nice pink color to it

Taste sauce as you mix to ensure it doesn't get too hot

Finale: Mix veg, lamb mix, and sauce together in a bowl and enjoy
